Just a few most series I've watched in no particular order:

Higurashi - I came many times. Satoshi could buy me a giant bear any day.
D-Gray.man - They REALLY need to continue this.
Gurren Lagann
Bleach - Most people hate this for the filler, but I think it adds so much depth to the series it's crazy. Also, I'm pretty sure it has one of the best story lines out there. ESPECIALLY with the recent episodes.
Cowboy Bebop - Bang. 'nuff said.
Claymore
Fate Stay Night
Black Lagoon
Death Note
Eden of the East - Only watched a bit of this, but it looked pretty awesome.
Ergo Proxy
Full Metal Alchemist - <3 the 7 deadly sins.
Inuyasha - I used to watch this religiously back in highschool. Still haven't finished it.

Serial Experiments Lain - Pretty trippy. Almost done this series.

Pretty much all of these I'd rate 9/10 or 10/10.

Spice and Wolf is very odd (man meets wolf spirit; wolf spirit teaches him about business) but well-done.

CORRECTION! the catch line is actually spicy "wolf meats merchant" ^_^ well according to the novel cover(Japanese cover that is) but you are right on the other part~

Oh man. ^ I had that series FORCED upon me. Watch all but the last three minutes of it, the whole series was chipping away at your sense of sanity building up to the final blow and only you'll realize this when it's to late. lovely crack series.

I'm watching Spice and Wolf right now, it is a little bit girly but I sense some foreshadowing to violence and conflict, so I'm going to keep watching.

I also discovered another season of Digimon that I wasn't aware of, so I'm also continuing with that.
