I've picked up a bunch of Rhapsody of Fire CD's while I was in Italy, and have been slowly building up my Blind Guardian collection.
I did pick up Once By Nightwish as well but that is more Symphonic Metal than Symphonic Power Metal, I was looking for other bands that have that power like Rhapsody and Blind Guardian, any recommendations?

hammerfall
kamalot both are my fav :birdy:
I wish I had an angel-For one moment of love
I wish I had your angel-Tonight
Deep into a dying day
I took a step outside an innocent heart
Prepare to hate me fall when I may
This night will hurt you like never before
Old loves they die hard-Old lies they die harder

Not sure what Symphonic Power Metal means :P Does this count?

SunLess Rise - Awakening

Neox

Pretty close. =P  I think the vocals kinda make it more like symphonic death metal, though.  Power-metal typically has that high-range singing vocals.

just in case you're still looking for more, check out pre 2001 Angra, Andre Matos is a fucking god, As well as one of my all time favorites, Ayreon (best album is The Human Equation imo), Lost Horizon is alright, one that alot of people I meet don't know about is ReinXeed, Majestic was AMAZING.

As well, someone needs to get shot for not mentioning Sonata Arctica, anything up until their most recent two albums is gold.

Ancient Bards, Sirenia, Euroforce...OH! And Fairyland are all good ones too, the rest in my collection have been mentioned already by others (including the pretty amazing Pathfinder)

Well, most of my symphonic/power metal collection has been mentioned already, but I'd also include Dragonland and some Edenbridge
Dragonland - The Black Mare
Edenbridge - Perennial Dreams

Avantasia also incorporates symphonic elements and soaring vocals sometimes. Sirenia is more symphonic metal than power metal. Falconer is pretty much the opposite.
Avantasia - The Wicked Symphony
Sirenia - The Path To Decay
Falconer - Mindtraveler
reality is subject to relativity.
