the one's I've tried either don't seem to work at all or the entire track isn't converted.
There is KeepVid (http://keepvid.com/), though I haven't used their MP3 converter.
Personally, I've been preferring to download the whole video, then convert it myself.
I've been using FFmpeg (http://ffmpeg.org), a very powerful media conversion program.
You'd probably want to find a graphical interface for it though, as it's primarily a command-line tool.
i use this one >>> http://download.cnet.com/Free-YouTube-to-MP3-Converter/3000-2071_4-10665553.html?tag=mncol;7 (http://download.cnet.com/Free-YouTube-to-MP3-Converter/3000-2071_4-10665553.html?tag=mncol;7)

Got Freestudio. Seems to work pretty good.
The one I use is an addon for firefox called "Easy YouTube Video Downloader" ... it creates a download button right next to the youtube videos and is converted nearly instantly on their servers... Get it from the add-ons manager...
I usually just use www.video2mp3.net (http://www.video2mp3.net) , it works pretty well o:
I use Vdownloader. Seems to have done the trick for me
