So, with Star and I having gone vegetarian, we've been playing around with different foods and recipes for things to try and add some variety to our diet and stay healthy - lots of tofu, eggs (remember - vegetarian, not vegan), that sort of thing.  I'm not a huge bean fan myself, but I do like lentils and some forms of chickpeas (falafel, hummus - you know, the bad-for-you stuff ;P), and Star is quite sensitive to spicy foods, so we try to avoid or modify those as appropriate.

We've made a vegetarian lasagna with cottage cheese, veggie 'ground beef' (soy and wheat gluten-based; Yves'), lots of garlic (yum!), tomato sauce, and whole wheat pasta; vegetable and tofu stir-fry where the tofu's been marinated in teriyaki sauce and optionally breaded in panko, and either on fried rice or egg noodles; pizza from scratch, yeast-risen dough and all; vegetable tempura with batter from scratch; roasted garlic mashed potatoes and some form of veggie protein; and probably a bunch of other things I can't remember off-hand.

For any other vegetarians or vegans on the board, do you guys have any favourite recipes you'd like to share, or if one of the above sounds nummeh, would you like more info on how we made it? :)

you'd have to let me think awhile on this one. with me being a dragon i am a bar-b-que cooker. i like cooking with fire. so i will think up the vegie recipies i know of.

my mate was raised vegetarian so I'm trying a lot of experimenting with foods. pastas are a big favorite.
eggs/omletts are huge with lots of cheese... you have to make sure you get enough protein  so beans are awesome for that.
he still eats seafood meats so I cook a lot of fish with steamed veg. dont know if you are still eating fish.

my mate makes some awesome omelets with peppers,yams,spinach, mushrooms and cheese.. super filling and tasty as hell !
salads with seeds and nuts and veg is always so very tasty. and they add to the flavor.

really just experiment ! it can be a lot of fun and very tasty !

one of my favorites is using avocado in salads and sandwiches. I get sourdough bread and toast it, i put avocado, mushrooms,spinach,cheese and sometimes red peppers. its sooo tasty and filling. and super healthy.

If you aren't a fan of lentils, you can always make your veggie burgers out of mushrooms. With smaller ones, you chop them with onions, spices, and bind with breadcrumbs. For the really big ones (like shitake) you can just grill the entire cap as you would a pre-made burger.

Cream base soups are also really easy and amazingly filling. Broccoli, or mushroom (or clam, if you still do seafood).

Kithop doesn't touch seafood, he hates it. And I myself will never touch a shellfish. They are boiled alive and it's so cruel to do so when it can be killed before it's boiled.

Kithop also doesn't like mushrooms. I've tried feeding him mushrooms. We buy our veggie patties, we don't make them.

Avocado's are not allowed in this house on the account of my parrots. Avocado's are deadly to almost all birds.

Rawr - still, omelettes with piles of stuff in sound yummy.  I always end up making myself basic cheese ones that, while awesome enough on their own, could probably be stretched to be a full meal if we stuffed them full of veggies and such. :D

I really do want to try some good lentil recipes.  Indian food like dal is sooo nummeh. *.*

I've been more of a carb-a-tarian lately; I lurve pasta and probably eat too much of it.  Considering 'vegetarian' implies vegetables that I should buy and eat more of... ;p

I'm not a super huge fan of cream soups - cream of potato and leek is nummy, but I don't like cream-based tomato soups.. I like more what's almost like watered down chunky pasta sauce. XD  Even so, roasted garlic & tomato soup with some good crusty bread was very win... need to make that again.  Though maybe once the tomatoes aren't all messed up from the weather, apparently.
